Tender pork loin…

Well….trying out a new time of eating that is supposed to lower your blood pressure, cholesterol, and give you more energy…read an article about it today that people who ate all their meals within a 6 hour period earlier in the day experience some real health benefits…but that’s not what this is about…just tried some of the new pork loins I got buy one get one free at Meijers this morning and I’ve never had one that is more tender…I did marinate the pieces in my standard marinade with olive oil, soy sauce, worst sauce, onion and garlic powder, and Italian seasoning…oh, and I threw in a little dijon mustard to try to spice it up a bit and then let them set in the fridge for 5 hours….I’ve used this on other pork loins before and they came out pretty tough so I think it’s actually the meat itself….the loins are quite small in diameter and are from a company called Hatfield that I’ve never heard of before…I barely even needed a knife to cut them they were so tender…so, it looks like I’ll get two more of them and try to find some room in the freezer for them…might have to throw out one of the ham bones I have in there since they take up enough space for two pork loins…and at 1.33 a pound, it is cheap protein that can be used in all kinds of dishes…but two more means I’ll have about 13 pounds in the freezer and that should last me the rest of the year…can’t wait to try some just cut into chops and seared before they go in the oven…that will be a good test for how tender they are…it was nice to have something that wasn’t chicken for a change….
