Well…with all of the damn tomatoes I have left over from the garden, I had to try to find a way to use them in dishes and I did that with all of the cherry tomatoes and some boneless chicken thighs along with onion and the one green pepper I had left and three cloves of garlic…then I cut up the last 4 potatoes I had left and put them in with some veggie broth for added flavor and some brown sugar to get rid of the bitterness…and it worked…it came out pretty good and I just simmered it until the potatoes were done then added some flour to thicken the sauce…so I have food for the next 3 days that I will have to augment with some breaded chicken like I did today…still under a thousand calories for the day so I guess I don’t have to feel guilty….
